This bread is delicious and so easy to make....I thought I would share with all of you!White Chocolate Chip Pumpkin Bread
1 ½ cups all-purpose flour
½ cup sugar
2 teaspoons cinnamon
½ teaspoon salt
2 teaspoons baking powder
1 cup milk
½ cup Libby’s Solid Pack Pumpkin (100% pure pumpkin)
¼ cup margarine or butter, melted
1 egg
1 cup (6 oz package) semi-sweet white chocolate morsels
¼ cup finely chopped nuts (optional)
Preheat oven to 375 F. Grease loaf pan.
Combine flour, sugar, cinnamon, salt, and baking powder in large bowl; make well in center. In small bowl, combine milk, pumpkin, butter, and egg; add to well in flour mixture. Add morsels and nuts; stir just until moistened. Pour into loaf pan.
Bake 45-50 minutes or until toothpick comes out clean. Cool 5 minutes. Remove from pan and cool completely.
Couple of notes....
- You can make muffins as well...grease muffin cups and bake at 400 F for 18-20 minutes.
- I never add nuts, but I am sure it tastes great with them.
- You can substitute the white chocolate chips for regular chips.
- If you use a dark, non stick pan, I would recommend turning the oven down 25 degrees or bake for 45 minutes at the most. I find mine gets really overcooked if you bake the bread for 50 minutes in the dark pan.
